My Favorite Summer Asparagus Salad for those Hot Days!

This recipe is definitely one of my family favorites. Even the teens and younger children love this salad, even though it has the color green! This recipe is from Allrecipes.com, my favorite recipe box online. They always have great ideas for dinners for one or 20!


Ingredients

  • 1 bunch fresh asparagus, trimmed and cut into bite-sized pieces

  • 2 tablespoons olive oil

  • 1 pinch garlic powder, or to taste

  • 4 cups lettuce leaves, cut into bite-sized pieces

  • 1 cup grape tomatoes, halved

  • ½ cup crumbled feta cheese


Directions

  1. Preheat the oven to 400 degrees F (200 degrees C).

  2. Place asparagus in a large bowl. Drizzle olive oil over asparagus and season with garlic powder; toss well. Transfer asparagus to a baking sheet.

  3. Bake in the preheated oven until asparagus are tender, about 20 minutes.

  4. Place lettuce in the same bowl used for asparagus; top with tomatoes, feta cheese, and roasted asparagus.
